Valerie Groth is the creator of the podcast Inspiration with Val. She is a Life and Career Coach that has made the move from safe decisions to making uncomfortable choices. She has an amazing story of personal development and the rollercoaster ride that she has been on.

She definitely does the cool stuff. She has run multiple marathons, went to graduate school twice, started her own business and her own podcast.

She is on this show more importantly for her shift in switching to a plant based diet that focuses on mindfulness and gratitude.

Val talks about how her mindset shifted when she ran her first marathon.
